Nut Butter And Coconut Flour Chocolate Chip Cookies

  • 1/2 cup white almond butter or cashew butter (or also sunflower butter if nut free)
  • 2/3 cup coconut flour
  • 1/4 cup coconut oil, melted
  • 3 tbsp (45g) yacon syrup (or your fave sweetener such as honey)
  • 1/3 cup roughly chopped dark chocolate
  • 1/3 tsp vanilla
  • 1/2 tsp baking powder
  • Pinch of salt
  • One handful pistachios (optional)
  1. Mix coconut oil, nut butter + yacon syrup. add vanilla, coconut flour, salt and baking powder. Throw in chopped chocolate and pistachios if you use them. Allow the dough to rest in the fridge from 30 min to 1 hour. preheat oven to 180°C.
  2. Cover a baking tray with parchment paper. do not worry if the dough looks runny/much more like cake batter, it will set.
  3. With a large tbsp place cookie dough 2 inches apart on baking sheet. bake for 8 - 10 minutes, then allow to cool for 15 minutes before touching and removing them from the tray.
Yield: 8 to 9 cookies
