Coconut Lemon Pie Energy Balls recipes

  • 1 cup raw coconut flakes + extra to roll balls in (or you can use a finer coconut for rolling if desired)
  • 1 cup raw cashews
  • 2 tablespoons coconut oil, melted
  • 2 tablespoons yacon syrup or maple syrup
  • Zest of 1 large lemon
  • Juice of 1/2 lemon
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon pink sea salt
  1. Add cashews to food processor and pulse until well chopped. Add the rest of the ingredients in and blend until the mixture resembles a sticky crumb. 
  2. Roll into balls, and roll to coat into coconut. 
  3. Set in refrigerator for at least 30 minutes, or in freezer for 10 minutes. 
  4. Enjoy, and share!
