Chocolate Chip Cookies with Yacon

  • 2½ cups blanched almond flour (not almond meal)
  • ½ teaspoon celtic sea salt
  • ½ teaspoon baking soda
  • ½ cup grapeseed oil or palm shortening
  • 1 tablespoon vanilla extract
  • ½ cup yacon syrup
  • 1 cup chocolate chips
  1. Combine dry ingredients in a large bowl
  1. Stir together wet ingredients in a small bowl
  2. Mix wet ingredients into dry
  3. Form ½-inch balls and press onto a parchment paper lined baking sheet
  4. Bake at 350°F for 7-10 minutes
  5. Cool and serve
